HERRING AND TOMATO BAKE
Serves 2
1 x 280g pot of sweet cured herring fillets
2 medium tomatoes - skinned and sliced
  small knob of butter
  freshly ground black pepper
70g
(2.5 oz)
coarse white breadcrumbs
45g
(1.5 oz)
mature cheddar - grated
15g
(0.5 oz)
parmesan - grated
15g
(0.5 oz)
flaked almonds
1 tsp chopped parsley

1. Drain the herring, reserving the onion pieces.
2. Arrange the herring and onion in a small oven-proof dish, and lay the tomato slices on top.
3. Dot with butter and season with black pepper.
4. Mix together the remaining ingredients and spread evenly over the herring.
5. Bake in a pre-heated oven at 200°C (400°F Gas 6) for 30 minutes.
