HONEY MUSTARD & DILL SALMON
with Spicy Almond
Serves 2 people as light meal

1x150g

Salmon in Honey Mustard and Dill sauce.
2 tblsp  broken flaked almonds
1/4 tsp crushed ginger
1/4 tsp garam masala
1/4 tsp  garlic powder or half clove fresh garlic
1/4 tsp cinnamon
1 tblsp thick coconut milk
  generous dash of Tabasco


1. Drain the Salmon, reserving the sauce. Mix the sauce with 1 tablespoon of almonds, ginger, tabasco, garlic, garam masala, coconut milk and cinnnamon. Lay Salmon in the base of an oven proof dish, pour sauce over.

2. Fry one tablespoon fresh white breadcrumbs in butter till golden and then add 1 tablespoon of broken flaked almonds. Scatter over the Salmon and sauce and bake for 10 minutes in a moderately hot oven until bubbling. Scatter with fresh coriander leaves.

3. Serves 2 as a main course with hot naan bread and basmati rice.
